Centre for Microbiology
As a specialist microbiology department, our focus is the investigation of microorganisms that are important for the safe manufacture of food and beverage products and identification of those that can cause food spoilage. Our primary objective is to enhance the safety of foodstuffs.
Our research and development projects encompass the development of new detection methods for microorganisms of relevance to food production based on molecular biological characteristics, the evaluation of methods to reduce and control pathogens and spoilage organisms and the establishment of new protective cultures and bacteriophages for the biological control of the bacterial load in foodstuffs.
