The Centre for Sustainability and Energy addresses the fundamental issues of sustainability in the food and nutrition sector. The entire food value chain is considered with a focus on food processing and the consumer.
The Centre’s research activities focus on the following areas:
- Sustainability assessments for businesses in the catering and food production sectors
- Promoting more sustainable nutritional habits
- Recording food loss and waste and developing possible prevention strategies
- Optimising the use of raw foodstuffs, 3D printing
The energy efficiency of food manufacturing processes is another of the Centre’s research interests, and the benchmarks it has established in this field have formed the basis for improvement proposals.
