Research topics:

- Development and application of functional cultures in food
- Development of fast methods to examine food safety and shelf life of particular food, such as drinking water, bread products
- Evaluation of the problem of ropiness of bread
- Evaluation and optimisation of shelf life of particular food, such as MAP-packaged food
- Examinations of the behaviour of pathogens in food, such as Salmonella spp. on cocoa beans and in chocolate mass (inactivation by roasting, debacterisation or conching)
- Verification of the behaviour of pathogens in particular food, such as Listeria spp. in cheese products or Bacillus cereus in bread products
- Examination and optimization of new products and technologies for the decontamination of food enterprises
